Banana Energy Bites
3 ripe bananas, mashed
2 eggs, lightly beaten
½ cup agave syrup or honey
2 Tbsp.
canola oil1 tsp.
vanilla extract
1½ cups all-purpose flour
1 tsp. baking soda
½ tsp. salt
Preheat the oven to 350 F. Coat 3 mini muffin trays with cooking spray.
In a bowl, combine the bananas, eggs, agave syrup, oil, and vanilla. Stir well.
In a separate bowl, whisk together the flour, baking soda, and salt.
Add the banana mixture to the flour mixture and stir to combine. Spoon the batter into the muffin trays, filling each cavity with 1 heaping teaspoon of batter.
Bake for 15 minutes, rotating the trays halfway through. Let cool for 1 minute then remove the banana bites from the trays and cool on a rack. Store in an airtight container at room temperature for up to 2 days or freeze for up to 1 month.
